Ingredients
- 3 pounds Jimmy Dean Hot sausage (use Regular if you don’t like spicy)
- 2 Tablespoon SYD Hot Rub (mixed into the 3 lbs of Jimmy Dean)
- 3 lbs of thin sliced bacon
- 3 eggs, cooked into a thin omelet, seasoned with salt and pepper, set aside to cool
- 1 slice pumpkin loaf (I bought a slice from Starbucks)
- 1 slice ginger loaf (again from Starbucks)
- 1 package cream cheese
- 1/4 cup SYD BBQ Sauce
- tube icing
Instructions
- Create a bacon weave and line the silicone gingerbread man mold. I cut the bacon slice into half lengthwise to make for a finer weave.
- Place a layer of Jimmy Dean sausage over the bacon (about 1 1/2 lbs)
- Place your omelet on the sausage and then your slices of pumpkin loaf and gingerbread loaf
- Add cream cheese and cooked crumbled bacon
- Fold the egg to cover
- Add a layer of Jimmy Dean sausage over the stuffing (about 1 1/2 lbs)
- Place a layer of bacon weave over the Jimmy Dean sausage
- Cook in 300F pit until internal is 165F (about 40-60 minutes)
- Brush on your favorite barbecue sauce and decorate the eyes, nose, mouth, body, arms, and legs.
- Cut and serve warm with some BBQ sauce on the side.
