Scale
- Mini Sweet Red Orange Peppers
- Green and Black Seedless Grapes
- Rainbow carrots
- Lemons and Limes
- 2 TBS favorite BBQ rub
- EVOO
Instructions
Season the Vegetables
- Apply schmear of EVOO to help rub to stick
- Apply a medium coat of your favorite BBQ beef rub. We use Slap Yo Daddy All Purpose Rub
Preheat the Grill
- Light your grill with wood or charcoal and create a cool and a hot zone. You are looking for medium heat, around 325F or 160C
Grill the Vegetables
- Place the vegetables on the hot zone of your grill
- Adjust the height so you are cooking directly over your coals at 325F or 160C
- Cook to the tenderness of your preference
Remove and Serve
- Serve with your favorite grilled proteins
Notes
- Don’t be afraid to move the J-grates up or down to get the desired cooking temperature
- If you are cooking with charcoal, you can add some wood chunks for more smoke flavor
- Avoid overcooking your vegetables to preserve the texture and vitamins
