Ingredients
- 4 skinless salmon fillets (about 24 oz)
- 1/4 cup SYD BBQ Sauce
- 1/2 tablespoon SYD All Purpose Rub
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon cayenne pepper
- 1 tablespoon fresh chopped parsley or dried parsley
- 12 Ritz crackers, crushed, about 1/2 cup
Instructions
- Mix together in a bowl the SYD rub, Parmesan cheese, parsley, cayenne, and crushed Ritz crackers
- Brush salmon fillets with SYD barbecue sauce
- Dredge the wet salmon fillets into crumb mixture
- Place into 375F pit on the indirect zone away from the fire. You can also cook this in your oven in a foil lined baking dish
- Smoke or cook about 12-16 minutes until fish flakes easily with a fork
- Drizzle more barbecue sauce as needed
