We recommend using Primal Grills Live Fire Grills

  • 1 whole Skirt Steak, Choice or Prime
  • 2 TBS favorite BBQ beef rub
  • Schmear of Worcestershire

Instructions

Trim the Skirt Steak

  • Trim off any excess fat or silver skin around the skirt steak

Season the Skirt Steak

  • Apply schmear of Worcestershire to help rub to stick
  • Apply a medium coat of your favorite BBQ beef rub.  We use Slap Yo Daddy Moola Beef Rub
  • For best results, dry brine in fridge for an hour before cooking

Preheat the Grill

  • Place the skirt steak on the hot zone of your grill
  • Adjust the height so you are cooking directly over your coals at 325F or 160C
  • Cook until the internal temperature reaches 125F or 52C, about 15 minutes depending on how warm your steak was when you started

Rest and Serve

  • Once done, remove the skirt steak from the grill and let it rest for a few minutes before serving
  • Slice across the grain.  Serve with your favorite sides 

Notes

  • Don’t be afraid to move the J-grates up or down to get the desired cooking temperature
  • If you are cooking with charcoal, you can add some wood chunks for more smoke flavor
  • Be sure to use a meat thermometer to check for doneness to avoid overcooking the skirt steak.  I like medium rare of 128F internal temp
