Smoked Nuts with Rosemary Butter

Here’s an easy crowd-pleasing snack you can make for your parties before your barbecue meats are ready. As the hot smoked nuts emerge from your pit, your guests are sure to be drawn in by the buttery sweet fragrance of rosemary in your backyard. In my catering gigs, this is a very popular signature item. If you’re not having a party, you can enjoy them while your barbecue cooks. Better yet if there’s a football game going on and you’re got your favorite ice-cold beer to keep you company.

Ingredients

  • 1 1/2 lbs mixed nuts of your choice
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon ginger powder
  • 1 tablespoon SYD Rub
  • 1 tablespoon butter, melted [I used unsalted butter]
  • 2 tablespoons finely chopped fresh rosemary

Instructions

  1. Heat pit to 350F. Add one tennis sized apple chunk
  2. Put nuts into half size foil pan and smoke in pit for 15 minutes until they are golden brown
  3. Stir once during the smoking process
  4. Combine the brown sugar, SYD rub, butter, rosemary, and cayenne in a bowl
  5. Toss the mixture with the smoked nuts
  6. Serve immediately.
